Superfood Tip: Frozen vegetables

Frozen vegetables are a dinner saver, time saver and sometimes budget saver. They are preferred over canned vegetables because most frozen vegetables are not preserved with sodium. Frozen vegetables are frozen at the peak of their growth. This maximizes the nutrition retained in the vegetable. This is in contrast to canned vegetables that are canned at high temperatures which is destructive to some nutrients.

The main consideration is how you prepare frozen vegetables. The more water used to cook them, the more nutrients that will leach out — this is a problem if you don’t plan on consuming the water ie. cooking frozen vegetables in a soup.
